We use fresh "Stenley" plums with huge, pulpy fruits without any mechanical damages, spots or doubles, cleaned from stems and leaves, and dried to the following conditions: 
-The appearance is whole glossy pulpy fruits with a fine skin at approximately the same size.
-The outer color is steady black. The color of the flesh is brownish to light brown.
-Taste and odor: sweet, sweet-and-sour, clearly defined odor of prunes without any side taste or smell. 

 We use big, round and healthy not rotten walnuts. The nuts is easily removed from the shell and has very good taste.
